2006 ASIF Cabernet Sauvignon

Sourced from the Tscharke Family Marananga and Seppeltsfield Vineyards this delicious Cabernet Sauvignon encapsulates all the great attributes of the Barossa. A truly handcrafted wine, my only wish is that I could have produced more, but with only a small parcel of fruit harvested each vintage every drop is cherished. Choose your friends wisely before opening this one.

Tasting Notes

Delicate notes of violets, mint, eucalyptus and cedar. The sensuous full bodied palate is rich with blackcurrants, violets, liquorice and dark plums. An opulent wine of outstanding intensity and structure that will benefit from time, it is the perfect accompaniment for a long Sunday lunch of succulent slow roasted lamb.

Winemaking Report

The fruit is crushed and fermented in open top fermenters. Heading down boards were used to submerge the cap to ensure maximum extraction of tannins and colour. Fermentation was followed by 14 days of extended maceration before being basket pressed and racked to barrel for maturation and secondary malolactic fermentation.

Vintage Conditions

2006 was a great vintage, with the weather conditions near perfect. Good rainfall late in winter and early spring gave the vineyards a superb start to the season followed by ideal day and night temperatures for fruit ripening. It was great to be able to delay harvesting to achieve optimum tannin ripeness.

    A stunning example of ripe Cabernet from a region where Shiraz too often overshadows other varietals.  The wine was matured in new and seasoned French oak.  Totally opaque black purple colour with paint like cling to the glass walls and black purple hue.  Superb nose with violet top note followed by cassis and blackcurrant - delivering a perfect Cabernet sniffing experience.  The palate explodes with a bombardment of ripe blackcurrant, black pepper, spice and liquorice allsorts - yet there is refinement.  Exceptional length and depth.  Pefectly balanced tannins,  Exceptionally long aftertaste of black pepper, cassis and spice.
