Sourced from the Tscharke Family Marananga and Seppeltsfield Vineyards this delicious Cabernet Sauvignon encapsulates all the great attributes of the Barossa. A truly handcrafted wine, my only wish is that I could have produced more, but with only a small parcel of fruit harvested each vintage every drop is cherished. Choose your friends wisely before opening this one.

Tasting Notes

2007 gave rise to wines with restrained fruit but whopping tannins. The 2007 asif has lifted scents of blackcurrant, eucalypt and mint with mellow undertones of cassis. The palate is ripping with tannins with the 27 months spent in French oak giving the wine plenty of flesh.

Flavours of blackcurrant, mint and spice are wrapped up elegantly with velvety tannins making the wine the perfect accompaniment to slow roasted lamb or perhaps a confit of duck leg.

Winemaking Report

The fruit is crushed and fermented in open top fermenters. Heading down boards were used to submerge the cap to ensure maximum extraction of tannins and colour. Fermentation was followed by 14 days of extended maceration before being basket pressed and racked to barrel for maturation and secondary malolactic fermentation.

Vintage Conditions

Leading up to Vintage 2007 we suffered a damaging drought which lasted the whole season. Fortunately in the winery the wines behaved very well with clean primary and secondary fermentation which resulted in superbly elegant wines.
